CARBOXYMETHYL CELLULOSE (CMC)
CMC is an anionic, water soluble and biodegradablepolymer on natural basis and it is also the most versatileof all water soluble hydrocolloids.
- Construction Industry: CMC is used in most of cement compositions as well as construction materials because it acts as a stabilizer and hydrophilic agent. It improves the sand distribution in the cement, and intensifies it's adhesive properties. It is also used as gluing substance on paper.
- Food Industry: CMC is used on foods as an auxiliary agent in the shaking of ice creams, and creams; as an supplementary compound to produce gels in jellies and puddings; as a thickener in dressings and fillings; as a suspending agent in fruit juices; as a protecting colloid in emulsions and mayo; as a coating composite for fruit surfaces; and as a stabilizer for ready to bake products. Due to the fact that CMC is not metabolized by the human body, it's use on low calories products has been approved.
